I’m an RN, holistic nutritionist, and mamma to 2 toddlers, who’s had a passion for healthy living for years, but especially since struggling to get pregnant years ago.

 

  • Life aspirations

help others in their wellness journeys by sharing easy homemade recipes, and healthier swaps for everyday items such as kitchen and personal care. Teach my children to care about their bodies and what they put it in, and to care for the environment they’re surrounded by too. Starting a home garden and compost has been such a joy to watch them learn and appreciate the food and life around us

 

  • Bento lunch box to me

is a way to cut down on our environmental footprint since it’s reusable. I also like the convenience of being able to pack a multi-part meal, since I don’t like to rely on eating out

I pack lunches for when we go on picnics. My favorite lunches on the go have been chicken salad on lettuce boats, and deli roll ups with some raw veggies and hummus

I love the convenience, they’re small enough to carry around without the hassle, and the red looks chic to me.

 

 

Greek Yogurt Chicken Salad

 

(Serves 2-3)

  • 2 cups shredded chicken
  • 1/2 cup celery, chopped
  • 1/2 cup grapes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup pecans
  • 1 tbsp parsley
  • 1/2 cup plain Greek yogurt
  • 1/2 tbsp Dijon mustard
  • salt & pepper

 

Combine everything together and refrigerate until ready to eat!
